Amaretti & Cookies
Amaretti are part of the Ligurian and Piedmontese confectionary tradition. As in the past, almonds along with chestnuts, walnuts and hazelnuts are widely farmed across the region as primary crops, with laws and rules protection the orchards. Also referred to as Marzapani, the history of amaretti goes back over many centuries. Francesco Moriondo, the official pastry chef for the Savoy court, rediscovered amaretti and defined it as the cookie we know today. Whole amaretti fried in batter are a feature of traditional Piedmontese cuisine, while crumbled amaretti are a common ingredient in many regional sweets.
